Jettywave is a distillery experience that embraces the modern northern California coastal life. We wanted to find a path to ride our beach cruisers here to the harbor to create unexpected flavors with organic integrity in the wild pourings we distill and concoct. We welcome only those friendly, to drink responsibly, and healthfully with us in Half Moon Bay’s Princeton Harbor. Our distiller is currently producing using three stills and mash-tun we installed here at Jettywave Distillery. Our stills are all hand-forged in Colorado. We love MileHi Stills American-made copper and stainless metalworks, which plays into our hopes of buying as locally as possible. With an all-metal distillation and redwood fermentation, our distillery will be almost entirely plastic-free.
The Swell Lounge:
We are offering our take on a fresh new al fresco drinking experience at The Swell Lounge @ Jettywave. Years of scribbled recipes in our kitchens deserved a second chance at our healthy-ish bar. We wanted to extend our creative welcome to Jettywave friends from far and wide to join us here in the historic Princeton Harbor and there is no such thing as foggy weather- just bad clothing. Enjoy drinks in our bonfire lounge paired perfectly with Chef Jose Luis’ melange of fresh grown flavors from his pop-up “Gibraltar Gems at Jettywave”. Our Coastside’s most beloved restaurant, like many of us, followed its Silicon Valley dream only to return home to HMB. Cafe Gibraltar is back with its Mediterranean-inspired small plates, and has elected to joined us here at Jettywave. Taste how old-world secrets, rare heirloom spices, farm fresh ingredients, and Jose Luis’ renowned imagination conspire to redefine what your favorite tapas taste like
The Slab Bar:
Belly up in our Tasting Room, The Slab Bar and savor flights of our award winning spirits like our Jettybarrel Bourbon, California Botanical Gin, or Honey Moon Shine.Jettywave is never ‘sourced,’ ‘bottled by…,’ or ‘distributed by.’ Of the 2,000 bourbon distilleries in the US, only a handful produce on premises, and from farm-to-bottle. We are enthusiasts that craft our offerings entirely in Princeton Harbor. Try this lineup in cocktail form or straight along the coastal trail.
